It
is not uncommon for kitchen exhaust systems to expel
grease onto the
rooftop which is particularly common in systems that
cook hamburgers.
This collection of grease around the fan base jeopardizes
the integrity of the roof and will cause most roof
membranes to breakdown, becoming soft and gooey. Seams
can come
loose causing leaks. The results can be costly to the
restaurateur.
Since grease is a fuel
source for a fire, the collection of rooftop grease
posses a potential increased fire
risk. The risk of trip and fall hazards is increased
as well when service workers step in it. And the runoff
from rain will carry this grease down into the storm
drains causing environmental problems and potentially
subject the establishment to fines
